Our history has its beginnings in 2009 with a barrel, half a ton of grapes and a wine making course at La Estación de Oficios.
With no other purpose than to undertake something we liked as a couple, our first harvest was 25 boxes that were consumed by family, friends and the first restaurant that opened its doors to us called "Mosto" in Tijuana.
In 2010 we produced 2 barrels and later 5 in 2011; for 2012 we decided that this would be part of our life plan and the winery was formally established. As gypsies, we produced the following vintages between the Estación de Oficios or spaces that we rented with friends in their wine cellars in Valle de Guadalupe.
And it was in 2015 when we finally installed our winery in Tijuana.
Beer production has its beginning in 2011 in the patio of our house with a 75-liter system and many weekends brewing and learning. Gustavo later entered the Brewing Science program at UCSD Extension.
BY 2012 a beer project is established under the name of Monastika and it begins to be placed in different bars in the city with very good acceptance. By 2015 we decided not to continue as part of that project and we consolidated the brewery under Totol, bringing over some of the recipes and labels.

Totol was born from the idea that embarking on this project as a couple was like a new childhood for us. Starting on something gives us the capacity for wonder and curiosity that one has as a child and that over time we loose. We believe that in each of us there is creative potential that needs to be expressed, it is part of being human.
Our name stems from the story that Marisol did not know how to pronounce her name and claimed to be called “totol”. Our ladybug represents the joy and simplicity in which we focus on and that we want to reflect in what we produce.
Totol is part of our company El Cantor de Barro (www.elcantordebarro.com) under which we have assembled different projects that reflect our passions.
Our company's philosophy focuses socially responsible human level productions, our pillars are sustainable growth, having a happy team, delighted clients and being as efficient as possible in what we do.
We are proud to be a Mexican and Baja California project, we are always looking for ways to support and collaborate with other local projects.
